If you’re having seafood in Hualien, Mola Mola would be the most special of all, I don’t think you’ll be able to see it anywhere else. Mola Mola, also known to the locals as “the flipped car” and “Ganbei”, it cannot be overcooked. Unlike other fish, it loses moisture rapidly while it’s cooking.

Most restaurants would stir-fry Mola molas with celery or sesame oil. There are many shops around the harbor that’ll help you cook the fish you bought at the fish market, they only charge you about 100NT (about 3 USD) per dish. It’s pretty good.
Being brought up in Hualien, for a seafood lover like me, I also like Mola mola in particular. It can be stir fried quickly with ginger and then a little soy sauce (this gives it the soy bean fragrance), it’s a light flavored dish. When you’re having hotpot, you can simply give it a quick dip in the soup and the meat would be cooked and tender, it’s delicious. Back when we had the restaurant, we would fry the Mola mola coated with flour. It’s crispy on the out side and chewy in the inside, it’s pretty good, too!
